Ingredients

The ingredients are:
  • 2 pounds beef shank (shin)
  • 6 cups water
  • 1 yellow onion (chopped, large )
  • 2 carrots, diced, large
  • 1 can (3 ounce) tomato paste
  • 2 cloves garlic, smashed
  • 1 pound cabbage, shredded (red cabbage)
  • 2 tomatoes, chopped, large
  • 1 bay leaf
  • 2 tablespoons red wine vinegar
  • 1 tablespoons granulated sugar
  • 6 (300 grams) beets, shredded (large)
  • 3 pounds potatoes (new)
  • 1 cup sour cream
  • 4 tablespoons dill, minced (fresh)

How to Make

  • Step 1: In large stock pot

  • Step 2: Put shin,onions, carrots and water

  • Step 3: Simmer 2 hours

  • Step 4: Add tomato paste, garlic,beets,bay leaf,tomatoes and cabbage

  • Step 5: Simmer 90 minutes

  • Step 6: Put potatoes on in another pan

  • Step 7: Keep cooking soup

  • Step 8: Boil potatoes until done, drain

  • Step 9: Mix dill in sour cream

  • Step 10: Add vinegar and sugar in soup,to taste

  • Step 11: Serve over potatoes that have sour cream on them
