  • 2 red bell peppers (chopped)
  • 1 yellow onion,chopped
  • 2 cloves garlic, minced
  • 1 jalapeno pepper, minced
  • 1 can (15 ounce) tomatoes , whole
  • 316 grams dry rice (dry, 2 cups)
  • 1 teaspoon curry powder
  • 1 bay leaf
  • 1/2 teaspoon thyme
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 3 tablespoons oil
  • 2 pounds boneless skinless chicken breasts (chopped)

How to Make

  • Step 1: Add oil to skillet

  • Step 2: Brown chicken

  • Step 3: In blender, Add tomatoes, peppers,onion and garlic

  • Step 4: Add stock,make sure its chunky

  • Step 5: Add spices except bay leaf

  • Step 6: In casserole, Add rice and chicken

  • Step 7: Pour over blender mixture

  • Step 8: Put in bay leaf

  • Step 9: Cover and bake at 400 degrees for 40 minutes
