Ingredients

The ingredients are:
  • 1 mango, large
  • 1 cup coconut milk
  • 1/4 cup yogurt ( plain yoghurt, full fat organic plain yoghurt specified)
  • 1/4 cup tequila (or white rum, vodka or gin - optional)
  • 1/2 teaspoon ground cardamom
  • 1/2 lemon, juiced
  • 1/4 cup pomegranate seeds
  • 1/4 cup coconut, shredded (roasted to serve)

How to Make

  • Step 1: Place the mango, coconut milk, yoghurt, white spirits (if using), cardamom and lemon juice in a blander with a few tablespoons of water and blitz until smooth.

  • Step 2: Pour the lassi mixture into 6 popsicle moulds and slide in the sticks.

  • Step 3: Sprinkle the pomegranate seeds over the top and push them into the mixture.

  • Step 4: Freeze for 6 hours or until set and serve sprinkled with coconut.
