Step 1: Adjust oven rack to second-lowest position. Preheat oven to 350°F. Butter a 9 x 13-inch baking dish (DO NOT use cooking spray!). Prepare a large cookie sheet (to catch any spills).
Step 2: Bring a large pot of water to a boil. Add in noodles; cook noodles according to package directions but under cook slightly. Drain rinse under very cold water, then drain well again. Add to a large bowl.
Step 3: In a medium bowl, whisk together eggs and sugar together until very smooth and well combined. Whisk in sour cream until smooth, then add in slightly cooled melted butter, salt and cinnamon mixing until well combined.
Step 4: Pour liquid mixture over noodles. Using a wooden spoon or spatula, combine all together very well. Pour mixture into prepared baking dish then smooth top. Place baking dish onto a baking sheet to catch any spills.
Step 5: Sprinkle top generously with granulated sugar.
Step 6: Bake until top is just golden and pudding is set, about 1 hour (I prefer a softer kugel so I only baked mine for 50 mins)
Step 7: Remove and allow to sit 10 minutes. Cut into squares. Enjoy!
