Ingredients

The ingredients are:
  • 1/4 cup white vinegar (60ml)
  • 1 teaspoon caster sugar
  • 1/2 teaspoon salt
  • 1 carrot, peeled and cut into matchsticks
  • 4 (250 grams ) bread rolls (Vietnamese Rolls or hot dog rolls was specified)
  • 1/3 cup mayonnaise (whole egg 100 grams)
  • 1 Lebanese cucumber, peeled and cut into ribbons
  • 100 gram iceberg lettuce, shredded
  • 1.2 kilogram chicken, whole (cooked from the deli)
  • 16 coriander sprigs
  • 2 spring onion, cut into matchsticks
  • 1 red chill, thinly sliced (optional, long)
  • Soy sauce, to drizzle (optional)

How to Make

  • Step 1: Place the vinegar, sugar, salt and 1 tablespoon water in a small saucepan over low heat and cook, stirring, for 2 to 3 minutes or until sugar dissolves and then remove from heat'

  • Step 2: Place the carrot in a heatproof bowl and pour over the vinegar mixture.

  • Step 3: Meanwhile, use a serrated knife to split each roll lengthways and co not cut all the way through and then spread cut sides of each roll with mayonnaise and fill with cucumber and lettuce.

  • Step 4: Drain carrot mixture from vinegar mixture and then arrange carrot, chicken, coriander and spring onion over lettuce mixture and top with chilli and soy sauce, if using.
