Ingredients

The ingredients are:
  • 320 gram baguette, cut into about 2-3cm pieces
  • Oil or butter, to pan-fry
  • 240 grams sardine fillets (marinated fillets), sliced in half (3 sardine fillets was specified)
  • FOR THE SALAD
  • 1/4 fennel, thinly shaved
  • 1/8 red onion, finely chopped
  • 1 cup rocket leaves (a handful was specified)
  • 3 green olive, pitted and thinly sliced
  • CLASSIC VINAIGRETTE
  • 1 teaspoon pine nuts, toasted
  • 1/4 teaspoon red chilli, chopped
  • 1 teaspoon currants (soaked in boiling water and then drained)
  • 1/2 teaspoon parsley, chredded
  • Extra virgin olive oil

How to Make

  • Step 1: Grill/broil or pan-fry slices of baguette to order in butter or oil.

  • Step 2: Mix all the salad ingredients together.

  • Step 3: Mix all the topping ingredients together.

  • Step 4: Add the salad on top of the baguette and then add marinated sardine and then add the topping and drizzle over dreassing and serve.
