Ingredients

The ingredients are:
  • MEATBALLS
  • 1 pound ground lean beef
  • 1/4 cup onion, red (chopped)
  • 1 teaspoon cumin
  • 1 teaspoon pepper, freshly ground
  • 1 teaspoon garlic powder
  • 1 tablespoon parsley, chopped
  • Cole slaw, prepared (1/2 cup cole slaw mix, chopped)
  • 1 cup cheddar cheese, sharp (grated)
  • 1 egg, lightly beaten
  • SAUCE
  • 24 ounces pasta sauce (one 24 ounce bottle garlic and basil pasta sauce or flavour of your choice)
  • 1/4 cup salsa (medium, hotter if you wish)
  • 8 ounces cracked black pepper fettuccini
  • 1/2 cup cheddar cheese, grated (sharp)

How to Make

  • Step 1: Preheat oven to 400f degrees. In a large bowl mix together thoroughly all meatball ingredients. Roll into 8 medium balls; place meatballs on a rack in a small cooking oil sprayed roast pan. Roast for 45 minutes, turning once.

  • Step 2: While the meatballs are roasting: Pour the pasta sauce and salsa into a large frypan, simmer on medium heat for about 10 minutes.

  • Step 3: Place the roasted meatballs into the pasta sauce, simmer for about 10 minutes.

  • Step 4: Boil the pasta in salted water for approximately 7 minutes or until al dente. Drain the pasta and place in large serving bowl; Pour the sauce/meatball mixture over the pasta; sprinkle 1/2 cup grated sharp cheddar over the top.
