Ingredients

The ingredients are:
  • 300 grams self-rising (2 cups)
  • 175 grams light brown sugar (1 cup)
  • 40 grams desiccated coconut (1/2 cup)
  • 1 cup milk (250ml)
  • 2 large eggs (lightly beaten )
  • 2 teaspoons vanilla extract
  • 200 grams dark chocolate (chopped)

How to Make

  • Step 1: Preheat oven to 180C (350F) and line 12 x 1/2 cup capacity (125ml) muffin tins with paper cases.

  • Step 2: Place the flour, sugar, coconut and cocoa in a large bowl and mix to combine and then add the milk, oil, eggs, vanilla and chocolate and mix until just combined.

  • Step 3: Spoon into the tins and bake for 20 minutes or until cooked when tested with a skewer.

  • Step 4: Allow to cool in the tins for 5 minutes before placing onto a wire rack to cool completely.
