Step 1: Heat oil in a large, deep frying pan over a high heat and add chicken drumsticks and cook, turning for about 5 minutes or until browned and transfer to a plate.
Step 2: Add mushrooms to the same pan and cook, stirring occasionally, for about 2 minutes, or until beginning to soften and then add recipe bases and water and stir to combine.
Step 3: Return chicken to the pan and gently boil, covered, for about 25 minutes or until chicken is tender, turn chicken and simmer uncovered for about 5 minutes or until slightly thickened.
Step 4: Remove pan from the heat and stir in cream and capsicum strips.
Step 5: Meanwhile, heat rice according to packet direction and serve chicken with rice and garnish with parsley.
