Step 1: Cook the bacon in a large skillet over medium-high heat and set aside, reserving the bacon grease in the pan.
Step 2: Add the chicken to the pan and cook until golden brown, about 6-8 minutes, before setting aside.
Step 3: Add the onion, sweet potato and brussels sprouts and cook until tender, about 10-15 minuted. Sffthe garlic, thyme and apples and cook until fragrant, about a minute.
Step 4: Add the broth and deglaze the pan by scraping up any brown bits from the bottom of the pan.
Step 5: Add the bacon, chicken, mustard, maple syrup and salt and pepper and cook until the sauce thickens, about 2-3 minutes.
