Ingredients

The ingredients are:
  • 160 grams bread rolls (2 x 80 gram ciabatta rolls, split in half)
  • Cooking spray oil
  • 3 tablespoons mayonnaise (97% fat-free)
  • 1 tablespoon basil, shredded
  • 1 teaspoon lemon juice, fresh
  • 1 cup rocket leaves
  • 1 teaspoon white wine vinegar or apple cider vinegar
  • 125 grams ham (thinly sliced salt-reduced)
  • 2 pears, unpeeled quartered and core removed and sliced
  • 1/4 small red onion, thinly sliced
  • 20 grams shaved parmesan cheese

How to Make

  • Step 1: Preheat a grill/broiler on medium and place the rolls, cut side up, on a baking tray and spray with cooking spray and cook under the grill/boiler for 1 to 2 minutes or until toasted.

  • Step 2: Combine the mayonnaise, basil, and lemon juice in a small bowl and then spread over the rolls.

  • Step 3: Toss the rocket and vinegar in a small bowl.

  • Step 4: Top the rolls with the ham, pear, rocket, onion and parmesan and serve.
