Ingredients

The ingredients are:
  • 1 cup quick oats
  • 2/3 cup whole wheat flour (self-raising)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 2 eggs
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1 banana, mashed (large)
  • Coconut oil spray
  • Greek-style yoghurt, to serve
  • Mixed berries, to serve

How to Make

  • Step 1: Combine oats, flour, baking powder and cinnamon in a bowl. Whisk eggs, buttermilk and vanilla together in a jug and stir in banana.

  • Step 2: Pour into dry ingredients, and stir well to combine and set aside for 20 minutes.

  • Step 3: Heat a non-stick frying pan on medium heat and lightly spray with oil and using a 1/4 cup of batter for each pancake and add to pan and cook for 3 minutes until bubbles appear on the surface and flip and cook on other side for 2 minutes. Remove from pan and keep warm and repeat with remaining batter to make 12 pancakes

  • Step 4: Serve with yoghurt and berries.
