Step 1: Combine oats, flour, baking powder and cinnamon in a bowl. Whisk eggs, buttermilk and vanilla together in a jug and stir in banana.
Step 2: Pour into dry ingredients, and stir well to combine and set aside for 20 minutes.
Step 3: Heat a non-stick frying pan on medium heat and lightly spray with oil and using a 1/4 cup of batter for each pancake and add to pan and cook for 3 minutes until bubbles appear on the surface and flip and cook on other side for 2 minutes. Remove from pan and keep warm and repeat with remaining batter to make 12 pancakes
Step 4: Serve with yoghurt and berries.
