Ingredients

The ingredients are:
  • 1 kilogram potatoes
  • 1/2 red onion (finely sliced into rounds)
  • 300 ml cream (cooking cream specified)
  • 1/2 cup crème fraiche
  • 2 cloves garlic, finely sliced
  • 1 to 2 sprigs thyme
  • 1/2 cup cheddar cheese, grated
  • 60 grams bacon (2 rashers of short bacon aka Canadian), finely chopped
  • Salt flakes
  • Freshly ground black pepper

How to Make

  • Step 1: Preheat oven to 180C (160C fan-forced).

  • Step 2: Peel and slice potatoes approximately 5mm thick slices.

  • Step 3: Layer 1/3 on base of a 5cm deep, 20cm x 25cm baking dish, slightly overlapping and then scatter over some the the sliced onion and repeat layersing until all the potatoes and onion are used, finishing with a layer of potatoes.

  • Step 4: Combine cooking cream, creme fraiche, garlic and thyme in a saucepan and heat until mix just comes to the boil and then pour over the potatoes.

  • Step 5: Sprinkle cheese and bacon over the top of potatoes and season and cover with foil and bake for 45 minutes.

  • Step 6: Remove foil and continue cooking for a further 20 minutes until golden and cooked through.

  • Step 7: Sprinkle with spring onion just prior to serving if desired.
