Step 1: Preheat oven to 180C (160C fan-forced).
Step 2: Peel and slice potatoes approximately 5mm thick slices.
Step 3: Layer 1/3 on base of a 5cm deep, 20cm x 25cm baking dish, slightly overlapping and then scatter over some the the sliced onion and repeat layersing until all the potatoes and onion are used, finishing with a layer of potatoes.
Step 4: Combine cooking cream, creme fraiche, garlic and thyme in a saucepan and heat until mix just comes to the boil and then pour over the potatoes.
Step 5: Sprinkle cheese and bacon over the top of potatoes and season and cover with foil and bake for 45 minutes.
Step 6: Remove foil and continue cooking for a further 20 minutes until golden and cooked through.
Step 7: Sprinkle with spring onion just prior to serving if desired.
