The ingredients are:
  • 475 grams cooked turkey meat (4 cups leftover)
  • 2 tablespoons olive oil
  • 2 tablespoons butter, unsalted
  • 1 large onion, chopped
  • 2 celery ribs, sliced
  • 1 green pepper, large, cut into strips
  • 250 grams mushrooms, fresh, sliced (8 ounces)
  • 28 ounces tomatoes, diced (1 can)
  • 6 ounces tomato paste (1 can)
  • 250 grams tomato sauce (8 ounces)
  • 1 cup red wine (or water)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 3 garlic cloves, minced
  • 1 tablespoon granulated sugar
  • Hot cooked pasta
  • Grated Parmesan cheese

How to Make

  • Step 1: In a large skillet or dutch oven, heat oil and butter.

  • Step 2: Add onion, celery, pepper and mushrooms and cook for 5 minutes.

  • Step 3: Stir in tomatoes, tomato paste, tomato sauce, wine, herbs, garlic and sugar.

  • Step 4: Bring to a boil; reduce heat and cover and simmer for 30 minutes.

  • Step 5: Add turkey, cover and simmer until heated.

  • Step 6: Serve over pasta of your choice and sprinkle with Parmesan cheese.
