Ingredients

The ingredients are:
  • 200 grams pizza crusts (2 crusts)
  • 1 tablespoon olive oil ( extra virgin)
  • 2 garlic cloves, minced
  • 1 1/2 cups grated cheese (pizza blend)
  • 400 gram pumpkin ( butternut pumpkin, peeled and seeded and thinly sliced)
  • 1/2 cup ricotta cheese(120 grams)
  • 2 teaspoons thyme leaves
  • TO SERVE
  • Honey
  • Baby rocket leaves
  • Thyme sprigs

How to Make

  • Step 1: Preheat oven to 200C and spray 2 baking trays with olive oil spray and place pizza bases on trays.

  • Step 2: Combine oil and garlic in a small bowl and brush over the bases and sprinkle with half the pizza cheese and top with onion, pumpkin and remaining pizza cheese and spoon over the ricotta and sprinkle with thyme leaves.

  • Step 3: Bake for 15 minutes or until cheese melts and pumpkin is tender.

  • Step 4: Drizzle with honey and top with rocket and thyme sprigs and season to taste.
