Ingredients

The ingredients are:
  • 1/2 cup buttermilk (125ml)
  • 1 tablespoon smoked paprika
  • 1 lime, zest and juiced
  • 400 grams chicken thigh fillets (4 thigh fillets)
  • 240 grams brioche burger buns (4 buns), split
  • 2/3 cup mayonnaise (200 grams)
  • 8 baby cos lettuce leaves
  • 120 grams cheese slices (4 slices)
  • 4 pineapple slices
  • 1 red onion, thinly sliced
  • 1/4 cup barbecue sauce

How to Make

  • Step 1: Combine buttermilk, paprika, lime zest and lime juice in a bowl and season and then add chicken and cover and place in the fridge for 30 minutes or overnight to develop the flavours.

  • Step 2: Heat a barbecue grill or chargrill pan on high.

  • Step 3: Drain the buttermilk mixture and pat chicken dry with paper towel and cook on grill for 5 minutes each side or until charred and cooked through and transfer to a plate.

  • Step 4: Cook the buns on the grill, cut-side down, until charred.

  • Step 5: Spread bun bases with a little mayonnaise and top with the lettuce, chicken, cheese. pineapple, onion, barbecue sauce and remaining mayonnaise and bun tops.
