Step 1: Place garlic, ginger, star anise, stock and soy sauce in a saucepan over high heat and bring to the boil and then reduce heat to low and simmer partially covered for 15 minutes.
Step 2: Bring to the boil and stir in noodles and reduce heat to low and cook for 1 minute and then add the pak choy and mushrooms and simmer until pak choy is just welted and noodles are cook through and remove and discard the star anise.
Step 3: Divide noodle mixture among serving bowls and top with spring onion and chilli, if using.
Step 4: Serve with chilli sauce, if using, and lime wedges.
