Ingredients

The ingredients are:
  • 3 garlic cloves , minced
  • 5cm piece ginger, finely chopped
  • 2 whole star anise
  • 4 cups vegetable stock (1 litre)
  • 1 tablespoon soy sauce
  • 72 gram packet noodles (2 minute noodles chicken flavour, noodles only)
  • 250 grams pak choy, trimmed
  • 100 grams brown mushrooms, thinly sliced
  • 1 spring onion, thinly sliced
  • 1 long red chilli, thinly sliced (optional)
  • 1 tablespoon chilli sauce (optional)
  • Lime wedges, to serve

How to Make

  • Step 1: Place garlic, ginger, star anise, stock and soy sauce in a saucepan over high heat and bring to the boil and then reduce heat to low and simmer partially covered for 15 minutes.

  • Step 2: Bring to the boil and stir in noodles and reduce heat to low and cook for 1 minute and then add the pak choy and mushrooms and simmer until pak choy is just welted and noodles are cook through and remove and discard the star anise.

  • Step 3: Divide noodle mixture among serving bowls and top with spring onion and chilli, if using.

  • Step 4: Serve with chilli sauce, if using, and lime wedges.
