Ingredients

The ingredients are:
  • 3 portabella mushrooms, thickly sliced
  • 1 red capsicum, seeded and thinly sliced
  • 1 red onion, cut into wedges
  • 2 tablespoons taco seasoning
  • 2 garlic cloves, minced
  • 2 tablespoon olive oil (extra virgin)
  • 4 (200 grams) flour tortillas (4 small)
  • 1/2 baby cos lettuce, shredded
  • 125 grams cherry tomatoes (quartered)
  • 1 avocado, stoned and peeled and thinly sliced.

How to Make

  • Step 1: Preheat oven to 200C.

  • Step 2: Line a baking dish with baking paper.

  • Step 3: Combine the mushroom, capsicum, onion, taco seasoning, garlic and oil in a large bowl and mix well and then transfer to the lined dish and roast for 15 minutes or until the vegetables are tender.

  • Step 4: Meanwhile, heat a barbecue and grill or chargrill on high and cook the tortillas for 2 minutes each side or until lightly charred.

  • Step 5: Divide tortillas among serving plates and top with lettuce, mushroom mixture, tomato and avocado.
