Step 1: Preheat oven to 200C.
Step 2: Line a baking dish with baking paper.
Step 3: Combine the mushroom, capsicum, onion, taco seasoning, garlic and oil in a large bowl and mix well and then transfer to the lined dish and roast for 15 minutes or until the vegetables are tender.
Step 4: Meanwhile, heat a barbecue and grill or chargrill on high and cook the tortillas for 2 minutes each side or until lightly charred.
Step 5: Divide tortillas among serving plates and top with lettuce, mushroom mixture, tomato and avocado.
