Ingredients

The ingredients are:
  • 1 1/2 cups mashed ripe banana
  • 1/2 cup extra virgin olive oil, light
  • 1/2 cup brown sugar
  • 2 eggs, lightly whisked
  • 2 teaspoons vanilla extract
  • 1 3/4 cups gluten-free self-raising flour
  • 1 teaspoon gluten-free baking powder
  • 1 teaspoon ground cinnamon
  • 200 grams fresh dates (10 dates), pitted and chopped
  • 1/2 cup pumpkin seeds
  • 1/2 cup sunflower seeds

How to Make

  • Step 1: Preheat oven to 160C.

  • Step 2: Grease and ine a 7 cup loaf pan with baking paper.

  • Step 3: Combine banana, oil, sugar, eggs ad vanilla in a large bowl and whisk until well combined.

  • Step 4: Sift flour, baking powder and cinnamon together and add to banana mixture and stir with a wooden spoon until just combined.

  • Step 5: Stir in dates with 1/3 cup each of pumpkin and sunflower seeds

  • Step 6: Transfer batter to pan and smooth top and sprinkle with remaining seeds and bake for 55 minutes or until cooked when tested with a skewer.

  • Step 7: Stand for 5 minutes, before transferring to a wire rack to cool.
