Step 1: To make burgers, combine all burger ingredients and form into four patties.
Step 2: To make capsicum relish, heat olive oil in pan over medium-high heat and saute onion until soft and then add red capsicum and cook until soft and then stir in spicy red sauce and simmer until thickened.
Step 3: Grill burgers on a barbecue grill plate until cooked to your liking and thent op each burger with a piece of sliced cheddar or Jarlsberg.
Step 4: Place burgers on brioche buns and top with lettuce, tomato and spicy red sauce or capsicum relish.
Step 5: Serve burgers with shoestring fries and wedges if wanted.
