Ingredients

The ingredients are:
  • 500 grams sweet potatoes (peeled and thinly sliced)
  • Olive oil spray
  • 8 large eggs
  • 1/2 cup cream (125ml) (light thickened cream specified)
  • 3/4 cup cheddar cheese, grated (90 grams)
  • 100 grams broccoli florets, blanched
  • 2 tablespoon basil, finely chopped

How to Make

  • Step 1: Preheat oven to 200C.

  • Step 2: Lightly grease and line the base and sides of a 20cm x 30cm slice pan.

  • Step 3: Place sweet potato on a lined oven trays and spray lightly with oil and bake for 15 to 20 minutes or until tender.

  • Step 4: Beat the eggs, cream and half the cheese together.

  • Step 5: Layer cooked sweet potato and broccoli florets over the base of slice pan and pour over egg mixture and sprinkle with basil and the remaining cheese and bake for 25 to 30 minutes or until golden and set.

  • Step 6: Stand for 5 minutes before slicing and serving.
