Step 1: Whisk together the lime juice, chilli, sugar, salt and olive oil and brush this mixture liberally onto the lamb cutlets and marinate for 30 minutes.
Step 2: Place lamb onto a hot barbecue and cook for 4 to 5 minutes, rotating one or twice.
Step 3: Turn over and cook for a further 3 to 4 minutes and use the remaining marinade for basting during cooking.
Step 4: Serve with a tossed salad.
