Ingredients

The ingredients are:
  • 1 container (700 gram) sliced peaches (in natural juices, drained)
  • 1 tablespoon all-purpose flour
  • 40 grams dried cranberries (1/4 cup)
  • 1 tablespoon granulated sugar (or granulated sugar substitute)
  • 20 grams digestive biscuits (plain cookies, 4 biscuits was specified)
  • 35 grams pecan nuts (toasted, 1/4 cup chopped)
  • 1 tablespoon margarine ( light margarine, melted)

How to Make

  • Step 1: Light firewood or charcoal and let fire burn down to medium-hot embers or coals and top with a grill rack.

  • Step 2: Combine peach slices, flour, cranberries and sugar in a medium bowl.

  • Step 3: Combine biscuits, pecans and margarine in a small bow.

  • Step 4: Heat a medium cast iron frying pan over the fire for 3 minutes and then add peach mixture and sprinkle with crumb mixture and cook for 12 minutes or until mixture is bubbly.

  • Step 5: TIP 1 - if you are not near a camp fire, you can simply cook in a frying pan over a barbecue or on a portable hotplate.

  • Step 6: TIP 2 - To toast pecans, cook over a medium heat in the frying pan for 2 to 3 minutes, stirring often, or until toasted.
