Step 1: In a saucepan over medium high heat add sugar and 1/4 cup water and bring to a boil, stirring to dissolve sugar; let boil, swirling pan occasionally and brushing down sides with a wet pastry brush (this is very important) until it is a deep amber color -- it will take 8-10 minutes. Reduce heat to low and add butter and stir until smooth. Stir in cream, brandy and spices; stir until smooth. Remove from heat and let cool at least 10 minutes before serving.
Step 2: ***can be made one week ahead, cover and chill. Bring to room temp before serving.
