Step 1: Preheat oven to 180C.
Step 2: Line 18 holes of a 1/3 cup (80ml) pan with paper cases.
Step 3: Whisk the egg, oil and orange juice in a jug.
Step 4: Combine the carrot, flour, sugar, bicarbonate of soda, orange rind, cinnamon and nutmeg in a large bowl and add the egg mixture and stir to combine.
Step 5: Spoon the mixture evenly among the prepared pans and bake for 25 to 30 minutes or until a skew inserted in the centres comes out clean and then transfer to a wire rack to cool.
Step 6: To make orange cream cheese icing, use an electric mixer to beat the cream cheese and butter in a medium bowl until smooth and then add the icing sugar and orange juice and beat until the mixture is well combined.
Step 7: Spread a little of the icing over the top of each cooled cupcake and arrange the M&M's Minis on the icing to make carrot shapes.
