Ingredients

The ingredients are:
  • 4 large eggs (lightly whisked)
  • 1 cup oil (vegetable oil)
  • 1/4 cup orange juice
  • 3 carrots, peeled and coarsely grated
  • 2 cups self-rising flour
  • 1 1/2 cups brown sugar
  • 2 teaspoon bicarbonate of soda
  • 1 teaspoon finely grated orange rind
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • FOR ORANGE CREAM CHEESE ICING
  • 250 grams cream cheese
  • 100 grams butter, softened
  • 1 cup icing sugar mixture
  • 1 tablespoons orange juice
  • TO DECORATE
  • Orange and Green M&M's Minis

How to Make

  • Step 1: Preheat oven to 180C.

  • Step 2: Line 18 holes of a 1/3 cup (80ml) pan with paper cases.

  • Step 3: Whisk the egg, oil and orange juice in a jug.

  • Step 4: Combine the carrot, flour, sugar, bicarbonate of soda, orange rind, cinnamon and nutmeg in a large bowl and add the egg mixture and stir to combine.

  • Step 5: Spoon the mixture evenly among the prepared pans and bake for 25 to 30 minutes or until a skew inserted in the centres comes out clean and then transfer to a wire rack to cool.

  • Step 6: To make orange cream cheese icing, use an electric mixer to beat the cream cheese and butter in a medium bowl until smooth and then add the icing sugar and orange juice and beat until the mixture is well combined.

  • Step 7: Spread a little of the icing over the top of each cooled cupcake and arrange the M&M's Minis on the icing to make carrot shapes.
