Step 1: To make burgers, combine all burger ingredients and form into four patties.
Step 2: To make capsicum relish, heat olive oil in a pan over medium-high heat and saute onion and then add red capsicum and cook until soft and stir in spicy red sauce and simmer until thickened.
Step 3: Grill burgers on barbecue grill plate until cooked to your liking.
Step 4: Top each burger with a piece of sliced cheddar or Jarlsberg.
Step 5: Place burgers on brioche buns and top with lettuce, tomato and spicy red sauce or capsicum relish and serve with shoestring fries if you wish.
