Ingredients

The ingredients are:
  • 1 tablespoon miso paste
  • 1 1/2 tablespoons honey
  • 4 (480 grams) fresh salmon (skin on, 4 x 120 gram fresh)
  • 180 grams ramen noodles
  • 150 grams snow peas (thinly sliced lengthways)
  • 1 carrot (peeled and cut into long matchsticks)
  • 1/4 cup coriander leaves
  • 1 1/2 tablespoons soy sauce
  • 2 teaspoon rice wine vinegar
  • 1 teaspoon sesame oil

How to Make

  • Step 1: Preheat greased barbecue grill or chargrill pan on medium-high.

  • Step 2: Combine the miso paste and half the honey in a medium bowl and season with pepper and add salmon and turn to coat.

  • Step 3: Cook salmon on grill for 2 to 3 minutes each side or until cooked to your liking and then transfer to a plate and cover with foil and set aside for 5 minutes to rest.

  • Step 4: Meanwhile cook the noodles in a medium saucepan of boiling water for 3 minutes or until just tender and add the snow peas and cook for 30 seconds or until bright green and tender crisp.

  • Step 5: Refresh the noodles and snow peas under cold water and drain and transfer to a large bowl.

  • Step 6: Add carrot, radish and coriander to the noodle mixture.

  • Step 7: Whisk soy sauce, vinegar, sesame oil and remaining honey to a bowl and drizzle over noodle mixture and toss to combine and serve with salmon.
