Ingredients

The ingredients are:
  • 300 grams sweet potatoes (2 small orange sweet potatoes see tip)
  • Olive oil cooking spray
  • 1 pear (small pear, Packham's Triumph was suggested)
  • 1 packet (120 gram) goat cheese (herb and garlic goat's cheese see tip)
  • 1/3 cup chopped walnuts (roughly chopped and toasted)
  • 2 teaspoons small fresh thyme sprigs
  • 2 teaspoon balsamic vinegar glaze

How to Make

  • Step 1: Preheat oven to 220C/200C fan forced.

  • Step 2: Place a wire rack over a large baking tray.

  • Step 3: Trim and discard end of sweet potatoes and cut into 5mm thick rounds and place potato, in a single layer, on the wire rack and spray both sides of the potato with oil and season with salt and pepper and bake for 12 minutes and then turn and bake for a further 12 minutes or until golden and then set aside and cook for 5 minutes.

  • Step 4: Quarter peat lengthways and remove and discard core and then thinly slice each quarter crossways.

  • Step 5: Place potato rounds on a serving plate and top each with 1 teaspoon of goat's chees, followed by 2 pieces or pear and sprinkle with walnuts and thyme and seas with salt and pepper and just before serving, drizzle with glaze.

  • Step 6: TIP- They used a orange sweet potatoes that were about 5.5cm in diameter ad suggested you could use plain goat's cheese or fresh ricotta, if you prefer.
