Step 1: Preheat oven to 220C/200C fan forced.
Step 2: Cook potatoes in a large saucepan of boiling water for 12 minutes or until just tender and then drain.
Step 3: Place potatoes, oil and cumin in a large ovenproof dish and toss to coat and then dot potatoes with butter and roast for 35 minutes or until starting colour.
Step 4: Using a fork, press each potato to flatten slightly and bake for a further 20 minutes or until golden brown and tender.
Step 5: Scatter over garlic, roast for a further 5 minutes or until garlic is golden brown.
Step 6: Season with salt while potatoes are hot and serve.
