Step 1: Preheat oven to 220C/200C fan forced.
Step 2: Line a ovenproof dish with baking paper and add chicken to the dish.
Step 3: Whisk maple syrup, soy sauce and garlic in a bowl and then drizzle it over chicken in prepared dish and bake for 10 minutes.
Step 4: Add carrot and onion to dish and bake for a further 10 minutes or until chicken is cooked and carrot tender.
Step 5: Meanwhile, place the coy sum in a heatproof bowl and cover with boiling water and let stand for 2 minutes and then drain.
Step 6: Add soy sum to dish with chicken and sprinkle with the reserved green onion tips and sesame seeds and serve chicken with rice is using.
