Ingredients

The ingredients are:
  • 4 large (740 grams) chicken thighs (bone in and skin on)
  • 2 tablespoon maple syrup
  • 2 tablespoons low-sodium soy sauce
  • 2 cloves garlic, minced
  • 2 carrots, cut lengthwise into wedges
  • 4 spring onions (cut into 4cm lengths and green tips reserve)
  • Choy sum, halved (1 bunch)
  • 1 tablespoon sesame seeds (toaste)
  • 1 packet (425 gram) jasmine rice (microwave jasmine rice, heat and served, optional)

How to Make

  • Step 1: Preheat oven to 220C/200C fan forced.

  • Step 2: Line a ovenproof dish with baking paper and add chicken to the dish.

  • Step 3: Whisk maple syrup, soy sauce and garlic in a bowl and then drizzle it over chicken in prepared dish and bake for 10 minutes.

  • Step 4: Add carrot and onion to dish and bake for a further 10 minutes or until chicken is cooked and carrot tender.

  • Step 5: Meanwhile, place the coy sum in a heatproof bowl and cover with boiling water and let stand for 2 minutes and then drain.

  • Step 6: Add soy sum to dish with chicken and sprinkle with the reserved green onion tips and sesame seeds and serve chicken with rice is using.
