  • 1 pound tilapia fish fillets
  • 4 limes, whole
  • 3 tablespoons olive oil
  • 1 yellow onion, chopped
  • 2 cloves garlic, chopped
  • 1 tablespoon chili powder
  • 1 carrot, chopped
  • 1 zucchini, medium chopped
  • 1 can (15 ounce) tomatoes (fire roasted)
  • 1 bay leaf
  • 6 cups shrimp stock
  • 1/2 cup pico de gallo
  • 1 teaspoon parsley
  • 1 teaspoon paprika
  • Pepper, dash
  • Salt, dash
  • 1/4 cup chopped cilantro
  • 1 pound shrimp (peeled cleaned)

How to Make

  • Step 1: Cut fish in two inch pieces

  • Step 2: Marinate fish in juice of limes

  • Step 3: Meanwhile in stock pot

  • Step 4: Heat oil add onion

  • Step 5: Add garlic, carrots, spices, stock, tomatoes and bay leaf

  • Step 6: Simmer for 30 minutes

  • Step 7: Add fish and juice

  • Step 8: Simmer 10 more minutes

  • Step 9: Add shrimp, pico de gallo and zucchini

  • Step 10: Simmer 10 more minutes

  • Step 11: Remove bay leaf

  • Step 12: Serve in shallow soup bowl

  • Step 13: Garnish with cilantro
