Ingredients

The ingredients are:
  • 100 grams butter, softened
  • 2 tablespoon maple syrup
  • 6 large eggs
  • 1 cup heavy whipping cream (pure cream)
  • 1/4 cup caster sugar
  • 2 tablespoons brandy
  • 2 tablespoon rum (dark)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • Cooking oil spray
  • 1 loaf (500 gram) brioche bread (16 slices required)

  • Fresh berries
  • Extra syrup

How to Make

  • Step 1: Using an electric mixer, beat butter until light and fluffy and then add maple syrup and beat until combined and set aside until required.

  • Step 2: Place eggs, cream, sugar, brandy, rum and spices in a large bowl and whisk until combined.

  • Step 3: Spray a large non-stick frying pan with oil and heat over medium heat.

  • Step 4: Dip 1 slice of the brioche into the egg mixture to evenly coat and allow excess to drain off and place into pan and cook for 2 to 3 minutes on each side or until golden and crisp and set aside to keep warm.

  • Step 5: Repeat with remaining brioche, lightly greasing the pan between slices.

  • Step 6: Serve the French toast with maple butter, berries and syrup.
