Ingredients

The ingredients are:
  • 250 grams butter (or margarine, at room temperature)
  • 1 tablespoon chipotle in adobo sauce
  • 1 lime, finely grated (rind and 2 tablespoons juice, large lime)
  • 1/3 cup coriander sprigs, finely chopped
  • 40 grams butter (or margarine, extra at room temperature)
  • 1 tablespoon olive oil
  • 1 kilogram shrimp (medium green prawns, peeled and deveined and tails intact, personally prefer to remove tails)
  • TO SERVE
  • Brioche slider buns
  • Shredded iceberg lettuce
  • 1 avocado (large avocado, cut into wedges)
  • Tomato slices
  • Lime cheeks or wedges

How to Make

  • Step 1: Place butter or margarine, chipotle, lime rind, lime juice and coriander in a bowl and stir until well combined and spoon into a serving bowl.

  • Step 2: Heat a barbecue hotplate or frying pan over a medium heat and when hot, add extra butter or margarine has melted add prawns and cook for 8 to 10 minutes turning occasionally, or until cooked.

  • Step 3: Place prawns with halved, toasted brioche buns, shredded lettuce, avocado, tomato, lime cheeks and remaining butter/margarine mixture.
