Step 1: Place butter or margarine, chipotle, lime rind, lime juice and coriander in a bowl and stir until well combined and spoon into a serving bowl.
Step 2: Heat a barbecue hotplate or frying pan over a medium heat and when hot, add extra butter or margarine has melted add prawns and cook for 8 to 10 minutes turning occasionally, or until cooked.
Step 3: Place prawns with halved, toasted brioche buns, shredded lettuce, avocado, tomato, lime cheeks and remaining butter/margarine mixture.
