Step 1: Combine sugar, juice and mint in a bowl and stir until combined, crushing mint to extract flavour and then let stand for 20 minutes for sugar to dissolve.
Step 2: Meanwhile, process watermelon in a food processor until finely chopped and then strain though a fine sieve into a large bowl, discarding solids.
Step 3: Strain sugar mixture and add to watermelon puree with Vocka Cruisers, sparkling water and ice.
Step 4: Pour into glasses and serve garnished with mint leaves.
