  • 1 pounds beets (pared cut on long strips)
  • 1 cup tomatoes, seeded
  • 4 cups water
  • 1 yellow onion (small, chopped)
  • 1/2 pound stewing beef (beef stew meat, chopped smallish)
  • 1 tablespoon lemon juice
  • 1 tablespoon granulated sugar
  • 4 large eggs
  • Pepper, dash
  • Salt, dash
  • Paprika, dash
  • 1/2 cup sour cream

How to Make

  • Step 1: In stock pot combine water, beets, meat, and tomatoes .

  • Step 2: Boil 30 minutes.

  • Step 3: Season with the spices, sugar and juice.

  • Step 4: Cook 30 minutes more.

  • Step 5: Beat eggs in bowl.

  • Step 6: Pour into hot soup gradually, stirring vigorously like for egg drop soup.

  • Step 7: Serve in soup bowl, top with sour cream.
