  • 6 cups butternut squash (chopped, cooked )
  • 2 large eggs
  • 236 grams unsweetened coconut milk (1 cup)
  • 1/2 teaspoon ginger
  • 1 tablespoon garlic, smashed
  • 1 tablespoon sage
  • Pepper, dash
  • Salt, dash
  • FOR TOPPING
  • 1/2 cup crushed crackers (Ritz)
  • 2 tablespoons butter

How to Make

  • Step 1: Put squash into 9x13 cake pan.

  • Step 2: Dot with butter.

  • Step 3: Sprinkle with garlic and sage, i use less garlic myself.

  • Step 4: Beat eggs, milk and spices.

  • Step 5: Pour over squash, stir to mix.

  • Step 6: Bake 400 degrees for 35 minutes covered.

  • Step 7: Uncover, put toppings on.

  • Step 8: Bake 15 more minutes.
