Step 1: To make the koftas, mix mince, garlic, spring onion, herbs, spices, salt and pepper in a large bowl until well combined and using you hands to thoroughly mix,
Step 2: Form 1/4 cup of the mixture into a log then thread on to metal skewer, using your hands to squeeze the mince mixture firmly on to the skewer and then transfer to a tray and repeat with remaining mince mixture to make 8 skewers, cover with plastic wrp and chill for 30 minutes.
Step 3: Heat a chargrill pan over high heat and cook koftas on grill for about 10 minutes, turning occasionally.
Step 4: Meanwhile combine tomtoes, oil, vinegar, lemon juice, green spring onion and pomegranate seeds in a large bowl and season and toss well to combine and then set aside for 10 minutes to allow the flavours to infuse.
Step 5: Serve koftas with tomato salad, hummus, labne, Arabic bread, lemon wedges, pomegranate arils and extra mint.
