Ingredients

The ingredients are:
  • 500 grams ground chicken (mince)
  • 3 cloves garlic, finely grated
  • 1 green spring onion (finely chopped)
  • 3 tablespoon mint leaves (finely chopped, plus extra to serve)
  • 2 teaspoon ground coriander
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon freshly ground black pepper
  • Hummus, to serve
  • Labne, to serve
  • Arabic bread, to serve
  • Lemon wedges, to serve
  • Pomegranate arils, to serve
  • FOR TOMATO SALAD
  • 250 grams cherry tomatoes (quartered)
  • 2 tomatoes, roughly chopped
  • 2 tablespoons olive oil (extra virgin)
  • 1 tablespoon red wine vinegar
  • 1 lemon (Juice of)
  • 1 green spring onion (thinly sliced)
  • Pomegranate seeds (from 1/2 pomegranate, plus extra to garnish)
  • Sea salt flakes, to season
  • Freshly ground black pepper, to season

How to Make

  • Step 1: To make the koftas, mix mince, garlic, spring onion, herbs, spices, salt and pepper in a large bowl until well combined and using you hands to thoroughly mix,

  • Step 2: Form 1/4 cup of the mixture into a log then thread on to metal skewer, using your hands to squeeze the mince mixture firmly on to the skewer and then transfer to a tray and repeat with remaining mince mixture to make 8 skewers, cover with plastic wrp and chill for 30 minutes.

  • Step 3: Heat a chargrill pan over high heat and cook koftas on grill for about 10 minutes, turning occasionally.

  • Step 4: Meanwhile combine tomtoes, oil, vinegar, lemon juice, green spring onion and pomegranate seeds in a large bowl and season and toss well to combine and then set aside for 10 minutes to allow the flavours to infuse.

  • Step 5: Serve koftas with tomato salad, hummus, labne, Arabic bread, lemon wedges, pomegranate arils and extra mint.
