Ingredients

The ingredients are:
  • 350 grams sweet potatoes (2 large, peeled and cut into small cubes)
  • 2 tablespoons olive oil
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 2 teaspoon ground cumin
  • Salt
  • Pepper
  • 1/2 cup chopped parsley (a handful was stipulated)
  • 45 grams pitted dates (chopped)
  • 1 tablespoon sesame seeds (heaping tablespoon black seeds, normal sesame seeds also work but you will just need to toast them)
  • FOR THE DRESSING
  • 2 tablespoon date syrup (or maple syrup)
  • 2 tablespoon sesame oil
  • 2 tablespoon smooth peanut butter
  • Lemon juice (of 1/2 lemon)
  • TO SERVE
  • Handful of peanuts, toasted and chopped (optional)

How to Make

  • Step 1: Preheat oven to 240C (220C fan forced).

  • Step 2: Place the sweet potatoes in a large baking tray and drizzle with the olive oil, add the spices and some salt and pepper and mix well, ensuring everything is coated and bake in the oven for 45 to 50 minutes, until they are really soft.

  • Step 3: While the sweet potatoes are cooking, make the dressing by whisking everything with some salt until smooth.

  • Step 4: Next, place the parsley and dates in a large bowl with the sesame seeds and once the sweet potatoes are cooked, add the bowl with the dressing and mix everything together and sprinkle with toasted peanuts, if using.
