Ingredients

The ingredients are:
  • 700 grams potatoes (brushed potatoes, peeled and cut into chunks)
  • 100 grams unsalted butter
  • 60 grams white chocolate
  • 2 cloves garlic, minced
  • Nutmeg, pinch (freshly grated nutmeg)
  • 200 ml cream
  • Sea salt flack, to season
  • Freshly ground white pepper, to season
  • 2 tablespoons olive oil (extra virgin)
  • 2 brown onions (finely sliced)
  • 1 swede, grated (peeled)
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons molasses
  • 12 thick (1 kilogram) pork sausages (Cumberland pork sausages)
  • TO SERVE
  • Mint sauce
  • Gravy
  • Peas
  • Sliced radishes

How to Make

  • Step 1: Steam potatoes in a steamer basket over a saucepan of simmering water, covered tightly with a lid, for about 20 minutes or until tender (time will vary depending on the size of the potatoes), then set aside for 3 minutes.

  • Step 2: Melt butter din a medium saucepan over medium heat and when bubbling, add chocolate, garlic and nutmeg and cook, stirring for 1 minutes and then add cream and bring to a simmer, stirring until well combined.

  • Step 3: Press potatoes through a ricer into a large bowl and then fold in cream mixture and season with salt and white pepper and mix until creamy.

  • Step 4: Heat olive oil in a frying pan over medium heat and fry onions and swede for 10 minutes, until well browned and then add Worcestershire sauce and molasses and cook for a further 2 minutes and then set aside and keep warm.

  • Step 5: Fry or grill/broil sausages for 12 minutes, turning until cooked through.

  • Step 6: Spoon mash on to serving plates and top with sausages, onion mixture, gravy and peas and garnish with radishes.
