Ingredients

The ingredients are:
  • 1 romaine lettuce (baby cos lettuce)
  • 1 apple (medium red apple, quartered, cored and thinly sliced)
  • 2 tablespoons lemon juice
  • 1 carrot (medium carrot, peeled and coarsely grated)
  • 200 grams red cabbage (trimmed and shredded)
  • 150 grams snap peas (snow peas, trimmed ad thickly sliced)
  • FOR DRESSING
  • 1/4 cup olive oil
  • 2 tablespoons white wine vinegar
  • 2 teaspoon wholegrain mustard

How to Make

  • Step 1: To make the dressing, whisk all ingredients in a small jug until combined.

  • Step 2: Cut lettuce crossways into 1cm slices and transfer to a large bowl.

  • Step 3: Place apple in a small bowl and add juice and toss to coat and then add apple to lettuce with carrot, cabbage and snow peas and drizzle with dressing and to combine and then transfer to a serving plate.
