Ingredients

The ingredients are:
  • 1 tablespoon oil
  • 2 pounds stewing beef (stew, roast or sirloin, cut into 2 inch cubes, or lamb)
  • 4 cups yellow onions (sliced)
  • 2 teaspoons ground coriander
  • 1 1/2 teaspoons ground cinnamon
  • 3/4 teaspoon ground ginger
  • 14 1/2 ounces beef broth (plus enough water to equal 2 cups)
  • 16 ounces pitted prunes (or dried figs, stems removed)
  • Salt and black ground pepper, to taste
  • 1 lemon

How to Make

  • Step 1: Brown beef cubes in oil in skillet. Place been in slow cooker. Reserve drippings.

  • Step 2: Saute onions in drippings until lightly browned, adding more oil if needed. Add to slow cooker.

  • Step 3: Add remaining ingredients except lemon juice.

  • Step 4: Simmer on low 5-6 hours, adding lemon juice during the last 10 minutes.

  • Step 5: OPTIONAL: Mix in a few very thin slices of lemon rind to add flavor and eye appeal.
