Step 1: In sauce pan combine all sauce ingredients, except tuna. Simmer 5 minutes.
Step 2: Add tuna into sauce mix and poach 15 minutes. Remove tuna and set aside to cool. Then cut into medium size pieces.
Step 3: Strain sauce mix to remove solids, then continue to cook until sauce is reduced to about 1/2 cup liquid or is thickened to your taste.
Step 4: In a separate mixing bowl, add tuna. Add rest of salad ingredients and two tablespoons of the reduced sauce and stir gently to combine.
Step 5: Serve with chopped or wedge salad.
