Ingredients

The ingredients are:
  • FOR SAUCE
  • 1/4 cup minced celery
  • 1/4 cup minced red onion
  • 1 carrot (medium carrot, grated)
  • 1 bay leaf
  • 1/2 cup dry white wine
  • 1 1/2 cup water
  • 1 lemon, sliced
  • 1/4 teaspoon marjoram
  • 1/4 teaspoon thyme
  • 1 pound tuna (steak)
  • FOR SALAD
  • 1/4 cup diced celery
  • 1/4 cup diced red onion
  • 1/4 cup diced red bell pepper
  • 1/4 cup sliced black olives
  • 3 tablespoons olive oil
  • 2 tablespoons minced parsley
  • 2 tablespoons lemon juice
  • Hot sauce, dash
  • Salt, dash
  • Pepper, dash
  • 1 head lettuce (small head iceberg lettuce)

How to Make

  • Step 1: In sauce pan combine all sauce ingredients, except tuna. Simmer 5 minutes.

  • Step 2: Add tuna into sauce mix and poach 15 minutes. Remove tuna and set aside to cool. Then cut into medium size pieces.

  • Step 3: Strain sauce mix to remove solids, then continue to cook until sauce is reduced to about 1/2 cup liquid or is thickened to your taste.

  • Step 4: In a separate mixing bowl, add tuna. Add rest of salad ingredients and two tablespoons of the reduced sauce and stir gently to combine.

  • Step 5: Serve with chopped or wedge salad.
