Ingredients

The ingredients are:
  • Lemon juice (from 1 whole lemon)
  • Celeriac (1/2 celeriac, peeled and cut into sixths)
  • 2 celery stalks(from the inner bunch, plus celery leaves)
  • Parsley (1 small pack, leaves picked)
  • 1 cup walnut halves (toasted, they stated a handful)
  • 50 grams Parmesan cheese (shaved into ribbons)
  • 1 tablespoon olive oil (plus extra to drizzle)
  • FOR DRESSING
  • 1 tablespoon mustard (wholegrain mustard)
  • 3 tablespoon olive oil
  • 1 tablespoon sherry vinegar

How to Make

  • Step 1: To make the dressing, whisk all the ingredients together with 1 tablespoon water and some seasoning and set aside.

  • Step 2: Tip the lemon juice into a bowl and using a swivel blade peeler to shave thin ribbons of celeriac into the lemon juice and toss to coat.

  • Step 3: Thinly slice the celery sticks on an angle, but keep the leaves and toss all the ingredients, except the parmesan, with celeriac and season with sea salt and a little pepper.

  • Step 4: Pile the salad onto four plates and top with the parmesan shaving and drizzle with the dressing and extra olive oil before serving.
