Step 1: To make the dressing, whisk all the ingredients together with 1 tablespoon water and some seasoning and set aside.
Step 2: Tip the lemon juice into a bowl and using a swivel blade peeler to shave thin ribbons of celeriac into the lemon juice and toss to coat.
Step 3: Thinly slice the celery sticks on an angle, but keep the leaves and toss all the ingredients, except the parmesan, with celeriac and season with sea salt and a little pepper.
Step 4: Pile the salad onto four plates and top with the parmesan shaving and drizzle with the dressing and extra olive oil before serving.
