Step 1: Place pork shoulder in roasting pan.
Step 2: Place onions around the roast, top with minced garlic and seasonings.
Step 3: Cover, bake at 350 degrees for one hour.
Step 4: Uncover, bake at 350 degrees for another hour.
Step 5: Remove pork from pan, set aside.
Step 6: Pour drippings and onions into skillet on med-low.
Step 7: Sprinkle flour over, mix until you have a soft paste.
Step 8: Continue stirring constantly, after flour browns, add in water a cup at a time stirring constantly to fully incorporate.
Step 9: Continue cooking until mixture makes a smooth brown paste. Season with salt/pepper.
Step 10: Slice meat from bone, put in serving dish, pour gravy over the top.
