Ingredients

The ingredients are:
  • 100 grams unsalted butter (chopped and at room temperature)
  • 1 cup caster sugar
  • 2 teaspoon vanilla bean paste
  • 1 teaspoon finely grated lemon rind
  • 2 large eggs
  • 1 1/2 cups self-rising flour
  • 1/2 cup milk
  • 25 grams unsalted butter (melted)
  • 1 teaspoon ground cinnamon
  • 2 tablespoon caster sugar
  • 300 ml double cream (to serve)

How to Make

  • Step 1: Grease a 22cm round cake pan and line with baking paper.

  • Step 2: Place butter, sugar, paste and rind in a small bowl of an electric mixer and beat until light and fluffy.

  • Step 3: Beat in eggs, one at a time, until combined and then transfer to a large bowl and add flour and milk in two batches and stir until combined.

  • Step 4: Spoon into prepared pan and smooth top and then cook in a 180C oven for 35 minutes or until cooked when tested.

  • Step 5: Stand for 5 minutes before turning out and brushing top with the extra butter and then sprinkle with combined cinnamon and extra sugar and serve hot with a dollop of cream.
