Ingredients

The ingredients are:
  • 4 (240 grams) bread buns (ciabatta or Turkish rolls/buns)
  • 300 grams smoked mozzarella (sliced)
  • 500 grams broccoli (but into florets)
  • 4 (16 grams) anchovies (chopped)
  • 1 lemon, whole (zest of and cut into wedges to serve)
  • 1 red chilli (long chilli, chopped)
  • 1 tablespoon chopped parsley
  • 1 tablespoon chopped mint

How to Make

  • Step 1: Bring a medium sized pot of water to the boil and blanch broccoli floret and stem for 2 minutes and refresh in plenty of iced water and then drain and season with olive oil, salt and pepper and grill on chargrill until lightly charred and smoky and allow to cool and then chop.

  • Step 2: Mix broccoli with chopped anchovy, chopped chilli, lemon zest and herbs.

  • Step 3: Open you rolls/buns and put cheese on both sides and fill with broccoli mix and close.

  • Step 4: Toast in sandwich press until hot, melted and gooey.

  • Step 5: Serve with lemon wedges.
