Step 1: Preheat oven to 475 degrees. Blend eggs, salt and pepper in blender until light and fluffy.
Step 2: In a cast iron or oven safe skillet, melt butter and sautee diced ham.
Step 3: Remove ham from skillet, set aside. Pour egg mix in skillet, place in oven.
Step 4: Bake for a few minute until eggs are cooked, check at about 5 minutes to gauge for doneness.
Step 5: When done, placed diced ham on one side, fold over and topped with minced ham.
