The ingredients are:
  • 6 large eggs
  • Salt, dash
  • Pepper, dash
  • 3 pounds potatoes (6 red, boiled)
  • FOR SPINACH SAUCE
  • 1 package (12 ounce) frozen spinach
  • 1 cup water
  • 1/4 cup oil
  • 1/3 cup all-purpose flour
  • 2 cloves garlic (minced)
  • 1/4 cup cream, optional

How to Make

  • Step 1: Blend water and spinach together.

  • Step 2: In a skillet, heat oil until hot. Add garlic, then flour (don't brown).

  • Step 3: Add spinach mix. Cook down (may add cream at the end).

  • Step 4: Meanwhile cook eggs sunny side up season

  • Step 5: Warm potatoes.

  • Step 6: Spoon some sauce on a plate, then add the potatoes on side.

  • Step 7: In center of sauce put 2 eggs.
