Ingredients

The ingredients are:
  • 1 tablespoon oil (sunflower oil)
  • 1 cup diced yellow onion
  • 2 cups zucchini, chopped
  • 120 grams green beans
  • 2 garlic cloves, minced
  • 3 cups tomatoes, chopped
  • 1 1/2 cup corn kernels
  • 800 grams white beans (2 x 400 gram cans, plus liquid)
  • 1 cup low-sodium vegetable broth
  • 1 teaspoon basil, dried to taste
  • 1/2 teaspoon parsley, dried to taste
  • Freshly ground black pepper, to taste
  • Chilli flakes (pinch, optional)
  • 1 teaspoon sea salt

How to Make

  • Step 1: Heat oil in a pot over medium heat, then add the onions, zucchini and green beans and saute for 5 minutes, until the onions are translucent.

  • Step 2: Stir in the garlic, tomatoes and corn and saute for another 3 minutes and then add the white beans and liquid, broth, basil, parsley, pepper and chilli flakes (is using).

  • Step 3: Simmer, covered, over medium-low heat for 7 minutes, stirring occasionally.

  • Step 4: Add the salt and more herbs, to taste and serve.
