  • 1/2 cup cream
  • 1 cup milk
  • 1 tablespoon butter
  • 2 egg yolks
  • 1/2 cup celery (cut in 1/2 inch pieces)
  • 1/2 cup walnuts, chopped
  • 1 can (15 ounce) green peas (drained)
  • 1 teaspoon salt
  • White pepper, dash
  • 125 grams cooked chicken (cubed, 1 cup)
  • 4 slices (100 grams) white bread (toasted)

How to Make

  • Step 1: In a small pot, mix cream, milk and egg yolks until thoroughly combined.

  • Step 2: Heat on low, stirring constantly to prevent burning milk, as milk warms add butter and seasonings.

  • Step 3: Continue cooking until mixture thickens.

  • Step 4: Add the chicken, peas and celery. Cook until heated through stirring constantly.

  • Step 5: When heated, remove from heat add walnuts, stir.

  • Step 6: Cut toast into triangles, top with portion of mixture. Serve.
